Panzanella

Start with 1/4 thinly sliced onion with a few slugs of white wine vinegar. Let the onion sit while you chop the rest of the ingredients including cucumbers, tomatoes, artichokes and some cubed toasted bread. Add a little olive oil, salt and pepper and toss all the ingredients together. The bread can get soggy after a while — so feel good about eating all the bread now!
