CSA Wax beans with bacon, parsley and almonds

Adapted from My Recipes.

  • ½ pound of yellow wax beans

  • ½ red onion sliced

  • Olive oil

  • 2 slices of bacon

  • Handful of almonds

  • 1 tablespoon red wine vinegar

  • Ground pepper

  • Parsley, thinly sliced

Bring a pot of water to a boil. While the water comes to a boil, trim the ends off of the beans. Add beans to boiling water for 5 minutes. Drain and set to the side.

Dice bacon and add to medium heat pan. After cooking for about 3 minutes add sliced red onions and almonds. Cook until bacon is crispy. 

Take bacon, almonds and red onions out of the pan and into a bowl. Add vinegar, pepper and parsley to the bowl and stir. Add drained beans and mix.
