CSA Cucumber, Kohlrabi and Scallions breakfast salad

Even though I have a big garden, I forget about veggies for breakfast. This morning, I wanted to 1.) eat some cucumbers and 2.) not turn on the stovetop. This is what I came up with!

Ingredients:

  • 1 kohlrabi, peeled and roughly diced

  • 1 cucumber, peeled and roughly diced

  • 2 spoonfuls of greek yogurt

  • Pepper

  • Salt

  • Dill

  • 1 scallion, just the green part, roughly diced

  • Garlic powder

Instructions:

Combined the roughly diced kohlrabi and cucumber with the two spoonfuls of greek yogurt. Added the dill, scallion, garlic powder, salt and pepper. I tasted it and decided to add a little more dill to the top. I love the flavor of dill and cucumbers together. I think it turned out pretty good and gave me a head start on staying hydrated!
